What are you most looking forward to on your summer holiday? Quaffing fine wines, moseying around an art gallery or perhaps enjoying a beach read? Phil Howard, chef-patron at the Michelin-starred London restaurant Elystan Street, is about to take three weeks off to head to Italy and France without his family — he and his wife, Jennie, have two children, Millie, 28, and Ali, 25 — get on his bike and cycle the entire route of the Tour de France, in the same time frame as the pros.

“I realise riding 200km a day, some of it uphill, may not sound like a holiday to everyone but despite the exhaustion and physical pain it will make me happy,” he says, smiling.
